Tea brewing mistakes: lessons and fixes for beginners
The five brewing mistakes that account for most bad cups, in the order they cost you, plus why bitterness damages the aroma as well as the taste.

Bitterness does more damage than it seems
Over-extraction is not just an unpleasant taste sitting next to a nice aroma. Work on bitter compounds paired with a coffee aroma isolate found that different bitter compounds significantly modified perception of the retronasal aroma profile, while showing no significant effect on orthonasal perception and negligible impact on aroma release measured in the headspace. In other words, the aroma molecules were still there. The perception of them changed.
That study used coffee, so read it as a mechanism rather than a measurement of tea. It explains something tea drinkers report constantly: an over-steeped cup does not smell wrong in the pot and tastes flat as well as harsh in the mouth.
The leaf is not finished after one steep
A study of a raw Pu-erh brewed fourteen times found that sensory quality was best between the third and seventh infusions, with the highest flavor compound concentrations between the fourth and seventh, and that after the seventh brew ester-catechins, non-ester catechins, free amino acids and caffeine had dropped by 28.82, 21.83, 28.86 and 40.37 percent respectively.
That is one tea, and it is a style chosen for durability. Most tea will not give you seven good rounds. But the principle stands: with whole rolled leaf, the first steep is often not the best one, and stopping after it means you never met the tea. Putting short repeated steeps beside one long one, on the same leaf, is one axis of a brewing method flight.
Work in order, one variable at a time
- Weigh the dose. Everything downstream depends on it.
- Set the temperature and leave it alone for three sessions.
- Time the steep and remove the leaf at the bell.
- Only then change the water.
- Change the vessel last, if at all.
Most people go straight to the vessel because it is the thing you can buy. Ranked by what it changes in the cup, equipment runs close to inverted from price. It is the smallest lever on the list. The habit that prevents most of it

Common questions
My tea is always bitter. What do I change first?
Time, then temperature. Take a minute off before you drop the heat, because shortening the steep costs you less body than cooling the water does.
My tea is weak but also bitter. How is that possible?
Not enough leaf, steeped too long to compensate. Raise the dose and cut the time. It is the most common misdiagnosis in tea.
Does boiling water ruin green tea?
It over-extracts most green teas, which reads as harsh. A few sturdy roasted styles handle it. Test rather than assume.
Should I preheat the pot?
Yes for anything brewed near boiling. A cold pot can drop the water by ten degrees or more, which makes your recorded temperature a fiction.
