The direction of travel
Two things are happening at once. Sensory evaluation, which has always been the basis of tea grading, is being supplemented by instruments. And production techniques designed for factories are being described in consumer language. Both produce advice that sounds authoritative and is often not applicable in a kitchen. Equipment claims run the same way, and on the evidence the cheap end does the heavy lifting.
Neither is a bad development. Grading by trained panel is slow, expensive and hard to standardize, so measurement is genuinely useful to the trade. The problem is the translation layer, where a laboratory result becomes a claim on a package and loses the conditions that made it true.
Instruments are getting better, and the caveats are published
A 2026 review of digital sensing for tea quality organizes the field around three objects: dry tea, tea infusion, and infused leaves, covering computer vision, near-infrared and hyperspectral imaging, electronic nose and electronic tongue. It is candid about what is not solved, listing data heterogeneity, limited model generalization, a lack of standardized protocols and databases, sensor drift, calibration transfer and equipment cost as current constraints, and noting that research on infused leaves in particular is thin.
That list is the useful part. When a seller cites an instrument reading for a tea, the questions are which instrument, calibrated against what, and generalizing from which dataset.
The one measurement worth owning
Among the instruments now being marketed, one is cheap and genuinely useful, and it measures your water rather than your tea. Conductivity works because pure water is an excellent insulator and stops being one as soon as it dissolves things, since the free ions carry the current and the reading tracks how much is dissolved.
A cheap meter therefore tells you roughly how mineralized your brewing water is. What that load does has been measured: as bicarbonate rises, the purity of tea aroma diminishes and cooked notes intensify. That is the single number most likely to explain why your tea tastes different from someone else's, and no amount of laboratory-grade tea grading substitutes for it.

What has not changed
Dose, temperature, time and water still account for nearly everything you can control, and the equipment to control them still costs less than a good tin of tea. None of the developments above changes that, and none of them is likely to. Advice that starts somewhere else is usually selling something. Should I believe extraction percentages quoted for tea?
Only with the method attached. Extraction figures are meaningless without the dose, the water and the time that produced them.
Does any of this change what I should do tomorrow?
No. Weigh the leaf, control the temperature, time the steep. That advice has not moved and is not going to.
