How to build a tasting flight around tea brewing methods
One tea, four brewing methods, everything else held constant. What the research predicts about hot, cold and iced steeping before you taste.

The design
Buy enough of one tea to run four methods on the same day. Same leaf, same water, same weight per volume, same vessel where possible. Then change only the method.

Prepare the cold steep the night before so all four are ready together. Tasting them a day apart defeats the point.
What the research says you should expect
A study compared hot steeping, cold steeping and a method using a brief hot infusion followed by ice, across green, black and oolong tea. It reported that hot infusion extracted rapidly but with relevant compound degradation, while cold infusion extracted more with slower kinetics, and that the brief-hot-then-ice method reached properties similar to cold infusion in a short time, with gallic acid and EGCG values about double those of hot infusion for the green and black teas.
That gives your flight a prediction to test. If the iced sample tastes closer to the cold steep than to the hot one, the chemistry and your palate agree. If it does not, the interesting question is why, and the answer is usually the dose or the ice ratio.
Keep herbal infusions in their own flight
Rooibos, chamomile and the rest are not tea and do not respond the same way. A box mixing them with tea needs at least two water temperatures, which is a setup question rather than a tasting one. A study of red and green rooibos compared cold brewing, regular brewing and microwave boiling and found that boiling delivered the highest total polyphenol content and antioxidant capacity of the methods tested, with cold and regular brewing of green rooibos giving similar results to boiled red rooibos.
Boiling hard is the wrong instinct for most true tea and a reasonable one for several herbal infusions. Mixing the two categories into one flight teaches you nothing about either.
Running it
- Taste the hot standard first while it is still hot.
- Taste the cold and iced samples at the same temperature as each other.
- Score bitterness, astringency, body and aroma strength separately.
- Note which one you would make again tomorrow.
- Repeat the whole flight with a second tea of a different type.
The second tea matters. Methods do not rank the same across categories, and a flight run on one green tea tells you about that tea, not about cold brewing. Holding one axis and letting nothing else move is the general rule for a flight, whatever the axis happens to be.
What this changes about the rest of your week
Most people find one method they had dismissed. Usually it is the hot-then-iced format, because it produces a cold drink in three minutes. How much tea does this take?
About 14 g for the four methods above. Buy 25 g and you can run the flight twice.
Can I compare methods across different teas?
No. That changes two variables at once and the result will not mean anything.
Should the cold steep be refrigerated?
Yes. Room temperature steeping for eight hours is a food safety question you do not need to have.
Which method wins most often?
There is no general answer, which is the reason to run the flight. Lightly oxidized teas tend to do well cold; roasted and fully oxidized teas tend to do well hot.
